I'm not Polish, but I fell in love with Polish food at the Polish festival last year. I bought a really great cookbook that I haven't yet used. I want to start with perogis because they seem fairly simple. However, the recipe in this book says that for the mashed potato perogis I can boil them. An American of Polish heritage tells me absolutely not. He said it will make them mushy. Is this true? I feel like the ones I had at the few Slavic festivals were not fried. They were very tender and not mushy. Any help?

Pierogi. You must first boil them and then the next day you can fry them. They are eaten fried or boiled, usually covered with onion or bacon.
